Superbowl Sunday is fast approaching and if you’re hosting the party, chances are you’re looking for ideas on what to feed your hungry guests. Well in combination with my panko crusted cauliflower wings,  I think these flatbreads will be the perfect appetizers to serve your guests. Not only are they vegetarian-friendly, but they are also packed with flavor so that even your picky eaters will never notice the difference. Flatbread has been a recipe that I have been playing around with for such a long time and after going back and forth between using whole-wheat flour & regular flour, I ultimately decided to stick with all-purpose because nothing else compares.

Now, as much as I talk about making healthy choices and their importance of contributing to a long and healthy life, I also want to be sure to share with you the importance of balance. I’m someone who does not restrict and if I feel like having a piece of cake or a cookie, I let myself have it. Why? Because when you allow yourself to have little indulgences here and there, it helps to prevent you from going overboard. So for that exact reason, I don’t feel bad about sharing with you this delicious recipe for flatbread that is not whole-grain but sure does make you feel good inside.

Just because I decided to stick with traditional white flour for this recipe, that does not mean that this recipe is not healthier than flatbread you would get at a restaurant. Instead of focusing on making a completely nutrient dense crust that would have probably tasted very similar to cardboard, I decided to deduct some extra calories by being more mindful of the amount of cheese and oil I used as well as by using my own marinara sauce. By making your own flatbread at home, you are able to control the amount of cheese and oil you put into it because it is your own version. I am so excited to share these with you as they were definitely a crowd pleaser! Now let’s talk ingredients.


◊ Makes 2 flatbreads (12 slices total)

Flatbread crust

  • 2 1/2 cups flour (all-purpose works fine) + extra 1/4 cup*
  • 2 tablespoons olive oil
  • 1 cup warm water*
  • 2 1/4 teaspoon dry active yeast = 1 packet dry yeast*
  • 1 teaspoon sugar*
  • 1 teaspoon salt
  • 1 teaspoon garlic powder


Buffalo Chick’n Flatbread


  • 1 cup marinara sauce
  • 1 cup part-skim mozzarella cheese
  • 1/2 stalk celery chopped
  • 1 package Gardein teriyaki chicken strips (w/out the sauce)
  • 1/3 cup Frank’s hot buffalo sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon paprika

optional: fresh green onions & yogurt “ranch” dressing

Yogurt “ranch” dressing

  • 1 cup plain unsweetened yogurt (I used this brand)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • little less than 1/2 teaspoon salt
  • fresh green onions

BBQ chick’n flatbread



  1. Begin by warming 1 cup of water (warm NOT hot) and adding in 1 teaspoon of sugar & 2 1/2 teaspoons of active dry yeast.
  2. Gently mix the water, yeast, and sugar mixture and set aside until it becomes frothy (about 5-10 minutes)20190130_124201.jpg
  3. Once the yeast mixture has doubled in size and become frothy add into a bowl along with the flour, salt, and olive oil. Stir to combine.
  4. Mix the flatbread mixture together and knead by hand for about 5 minutes until it is smooth and not sticky.
  5. You may need to add up to 1/4 cup extra flour if the dough is slightly sticky so set some aside just in case and add as you need it.
  6. Once the dough has formed into a smooth ball, add a small splash of olive oil into the bowl to coat all sides of the dough, cover the bowl and place in a dark area for a minimum of 30 minutes or up to 3 hours. (I kept mine in an unheated oven and left it there as I went about to run errands for 1 hour)20190130_143444.jpg
  7. When the dough has doubled in size, split it in half and begin by rolling it out into an elongated shape.
  8. Preheat the oven to 475°F  and place either a pizza stone or normal non-stick baking sheet into the oven to preheat as well.
  9. In the meantime add the Gardein strips to a pan containing olive oil and season with garlic, onion powder, & paprika if making the Buffalo or with just garlic powder if making the BBQ flatbread.
  10. Saute the Gardein strips for about 8-10 minutes or until they are golden on the outside and remove from heat. 20190130_150337
  11. Turn the heat to low and add in the celery (for the buffalo) or the red onions (for the BBQ) and saute for about 2 minutes. Remove from heat and set aside.
  12. Allow the Gardein strips to cool and once they can be handled chop them into bite-size pieces.
  13. Add the chopped Gardein strips back to the saute pan and with the heat on LOW add the buffalo or bbq sauce. Stir to combine and allow to simmer lightly in the sauce for 3-5 minutes.
  14. When the oven has reached the desired temp, take out the pizza stone or baking sheet and sprinkle a small amount of salt where the flatbread will bake and place the formed dough over the salt.
  15.  Bake the dough for about 5 minutes and remove from oven.
  16. At this point add the marinara sauce, cheese, and desired toppings and bake for an additional 7-8 minutes or until the crust is a slight golden brown color.

In this particular recipe, I decided to use Gardein strips because I want to introduce to you some products that I like to include from time to time to reduce my overall meat consumption. The reason I mention this is because the average American diet includes an excessive amount of meat products that ultimately can have an impact on your health. Excess amounts of animal protein have been linked to increased cholesterol, kidney disease and even increased risk of cardiovascular disease. In other words, it’s a good idea to include a variety of protein sources into your diet to avoid overdoing it with the animal protein.  Contrary to popular belief, it is absolutely possible to get in the necessary amount of protein by including some plant-based sources in addition to some animals sources. Moderation is everything when it comes to a healthy lifestyle so aim to have a variety of protein sources. If you are someone who struggles to cut back on your meat consumption, I would highly recommend giving these Gardein strips a try.
